It can be so hard to stick to a healthy lifestyle for your meals especially when you're running around all the time or you have class and work etc. I am there right now, trust me I get it. I have been searching for the perfect meal that takes under 10 minutes and is healthy still! I am so happy that I found it and now am obsessed with it, I make this meal 3 times a week I swear. They are just tacos... I know a lot of the time even when your home, homemade tacos are not the healthiest just because of the cheese and all the extra stuff we stuff them with. However, the recipe below is so healthy and avoids the extra bad ingredient we put on our tacos just because of the routine.
Basically, all your going to do is switch out your flour tortilla for a wholegrain one, you will get a better fiber intake with these tortillas and they taste so good. Mix and match any raw vegetables that you like with a protein. At the beginning of the week make a big bowl of mixed and ingredients that you want to put in your taco. I put avocado, diced onion, diced tomato, corn, diced jalapenos, and diced radish. I mix this all in a bowl, them squeezing some lemon or lime on top and covering and putting in the fridge. Whenever you want a meal it will be so easy to get your tortilla and just fill it up with your taco mix and go. Another ingredient I love to use in my tacos are chickpeas, they are tasty and have major health benefits while also giving the taco some more flavor. For my protein, I usually end up putting some grilled chicken in there or some steak!
