I love making this as a fast and easy meal believe it or not. This is also something super great to take for a dinner party or event, it looks like it was prepared for a long time but it's actually so easy to make.
First you need Manicotti shells, Ricotta, parmesan, basil, Parsley and marinara sauce. To start, put your oven at 350 degrees. Then boil your shells, to prepare the filling, put the ricotta in a bowl with some chopped parsley, salt and pepper, add parmesan and stir together. When your shells are mostly done, put in the sink and run cold water into the pot over existing water. We do this so the noodles stop cooking and they cool down to stuff.
When ready, get your cooking dish our layer with some oil and marinara sauce, start stuffing your noodles with filling. I usually just use a small espresso spoon but you can get a squeeze bag etc. After you've stuffed all your shells and put them in your cooking dish, layers with more marinara sauce and grate some parmesan over the dish with a few basil leaves, put in the oven for about 20-25 minutes!
What you need:

Ricotta
Parmesan
Basil
Parsley
Sauce (homemade)
Or my favorite store bought sauce with the best ingredients is PAO.
